Yummy lunch!

I made the coconut curry that Angela had on her blog yesterday. Oh yum!! Pair that with some black bean burgers and avocado in a La Tortilla wrap - and I 'm back in the game!!

Easy Beginner Curry - adapted from Angela @ Oh She Glows


  • 1 heaping T of curry powder
  • 1 t ginger
  • 1 28 oz can crushed tomatoes
  • 1 T coconut oil
  • 2 cloves minced garlic
  • pinch of sea salt
  • pinch of ground cloves
  • black pepper
  • Shredded coconut and peanuts (optional garnishes)

Mix all sauce ingredients into saucepan and heat on low, stirring frequently. Add peanuts or coconut for garnish.


SWIM Yesterday I swam with my sister. Usually I just go behind her in the lane, but we swam next to each other and I tried to keep up. We were doing a set of 100s - descend. The last one was fast. I felt like I was giving all my effort to sprint but she was flying ahead of me. After a 50, I kind of gave up and didn't give all my effort. I felt so defeated, my stroke felt like crap and I felt like I was a frolicking whale in the water, splashing around everywhere. I wish I hadn't given up so easily and I don't want Nick to be like that! So I have to make sure that I teach him not to give up!


RUN

Running question of the day: Do you tie and untie your shoes when you put on and take off? I have mizunos and I ruin the back part (it has a name, but I forget it) all the time. I'm trying to make a conscious effort here but I love just sliding in and out of my shoes.

  1. Don't beat yourself up too much about the swim, you were out there and got it in!
    And I always untie my shoes before I take them off. I spend a good chunck of change each year on running shoes and I hate to ruin them for something as simple as bending down taking them off properly.
    Love the curry soup receipe, I think I may try that tonight! :)

    um i totally untie the m to put them on and dont untie them to take them off. i guess its really bad b/c then they stretch out and dont fit your feet right. i've noticed my shoes can be really tight and just slip right off. with my next pair i will NOT take them off like that. the ppl at the running store warned me, but i didnt listen! :)

  3. I am very uncoordinated when it comes to slipping laced up shoes on and off - so I am definitely a put 'em on lace 'em up and vice versa girl. Otherwise it ends up being a lesson in futility!

    Food looks delish.

    And I never used to untie my shoes until I started running and am now fanatical about it. I am afraid to stretch them out by taking them off that. No idea if it makes a difference, but I am paranoid. Those puppies aren't cheap!

  5. I always tie and untie. Sometimes I don't untie all the way and then I have to loosen the laces when I go to put them on the next time.

  6. I didn't use to ever untie to take my shoes off but have always untied before putting them back on. Lately though, I've been trying to treat my shoes a little bit nicer (in hopes that they will do the same for me) and have been taking the time to untie them before taking them off.

    Your food always makes me so hungry...it looks great!

  7. You need some of those stretchy laces tri people put in their shoes. Apparently you don't have to tie/untie with those.

  10. I rarely untie my shoes to take them off, and I have never had any problems with the shoes getting messed up from doing so. I do untie to put on for the next run. I had never even heard of shoes getting messed up from not taking them off properly. Who knew? You learn so much from the blogs.

  11. Its called a heel counter and NOT untieing them is foolish. The faster you ruin the heel counter, the faster you ruin the shoe.

  12. Get some Yankz or other elastic shoe strings so you don't have to worry about tying your shoes anymore.
