Making BABIES :) and my best ever sliders

Fudge Babies that is!  I think I made these before - but I saw them again on Chocolate Covered Katie's blog and made them for a treat.   My recipe was:


I'm not good at measuring but something like this:
  • 1+ c cashews
  • 1 cup dates  
  • 4-5 T cocoa
  • 2 T coconut oil
 They are really good! Unfortunately, along with tomatoes, they give me bad heartburn!

Then I made my black bean sliders. I always tweak the recipe a bit and rarely measure but these were the best ever and I know what was in them:


1 can black beans (any beans work - canned is best)
1/2 package of silken tofu
1/2 cup cooked couscous
1 egg
1/4 to 1/2 C wheat germ
2 T nutritional yeast (just to add nutrients)
1/4 c chunks of colby jack cheese
cumin, salt, pepper

FOOD process! then grill them up on the stovetop with 1 T oil (I used much more) or cook in the oven. I love them with hummus and avocado.


A couple of people asked if I knew what I was having (boy or girl) - I don't know, I'm just guessing. I remember with Nick I was going to the bathroom 2-3 times a night, and now I can make it the whole night.  Anyone have a boy and a girl and noticed differences? 

I am starting to get nervous about the Broad Street Run - have you seen the weather? 85 and humid (for the day)... It is going to take me a LONG time!  I haven't figured out my plan logistically  (getting there, etc) yet, but I don't want my family having to wait around for me for hours!

  3. All of that looks yummy! I tried nutritional yeast on popcorn for the first time today! So good. Did you ever come up with any other recipes with nut. yeast?

    You'll do fine at the race! My first post partum 5k is a week from saturday. I would really like to do it under 30 minutes.....or at least beat current PR ;-)

  4. Good luck at Broad Street... I'm hoping that the temp in the morning will be more mangeable, or I'm going to struggle, too. Quite a change from the chilly, rainy weather for last year's race!

  6. I decided I am not running it. There is actually no way i can do it since I haven't been running for almost a month now. I've just been too tired an pukey to get out there and do ANYTHING. good luck with the run!!

  8. I did not have a difference with both of my pregnancies and I ended up having a girl and a boy. I thought for sure it was another boy because the pregnancies were the same!!!

  9. Yum! I definitely had big differences between my two pregnancies and had two different genders, so you never know! I'm with you on Broad St.--this heat is going to hit us hard after not having any lately. Keep yourself hydrated and your speed in check!

  10. I might have to institute these sliders into our Meatless Monday menu. Although, it might be awhile...I think Jerry planned out our menus for, like, the next month!

    I doubt a boy or girl makes any difference in how much you pee. The baby might be positioned differently so that he or she is not resting on your bladder in the same way, but I doubt that's an indicator of sex.

  12. I can't believe that it is going to be 85 on Sunday! It is so cold and gray that I don't even want to go outside today. I can't wait until it warms up, but that will definitely be tough on the runners that day.

  13. The fudge babies look great...did you use a food processor to mash the cashews?
    I am fickle with dates tho...wonder if dried cherries would be good? Hmmmmm
