Taking inspiration from Heather's
Strawberry Shortcake muffins which I just love, I changed a few things and made a bread out of it. It turned out much less dense than the first trial and not as sweet. I'm not concerned about the sweetness because all of these will have some kind of sweet icing. I'm more concerned about it being fluffy and tall enough for a train : )
Here's what I used:
- 1 C Unsweetened Almond Milk
- 1 t Apple Cider Vinegar
- 1 1/2 C Whole Wheat Flour
- 1/2 c ground oats
- 1 tsp Baking Soda
- 1/8 C maple syrup
- 1/3 C Unsweetened Apple Sauce

All your cakes have looked good. Hope you find the perfect one. My mum used to make us a themed cake and they were fab, so good on ya!
ReplyDeleteAgain a combo of soda, powder and salt are probably needed to get such "heavy" flours and oats to rise. This looks like you used a loaf pan so try 1/2 t. powder, 1/2t. soda and 1/2t. salt. That's what I usually use to get my low fat whole wheat sweet breads to rise, although I also use eggs so you may need a little more to compensate for them.
