Pumpkin Cornbread

Just in time for fall - some pumpkin!
Using Polly's recipe here inspired by Heather, I made Pumpkin Cornbread. I tweaked the recipe a bit.

PUMPKIN CORNBREAD


1/2 c pumpkin
2 c cornmeal
2 c milk
3 T. chia or flax + 3/4 cup of water - let sit 5 min.
1 tsp baking soda
1 tsp baking powder
1 tsp guar gum (tried it out since I didn't use an egg- not necessary, I don't think!)
1/4 c agave nectar

Mix all together, bake at 350 for 40 minutes!
Tasty!  The eggs would have made it rise more - check it out if you are into eggs. I'm not too into them.

2 days post race - yesterday I felt pretty good and ran 6 miles. Monday I swam to loosen up and did yoga and today swam again. I feel good!  2 months + a week out - my weight is about 1 lb away from where I started when I got pregnant with Kara, but I still have about 10 lbs to lose to get to where I should be! I have not had the time to think about it AND have been downing too many nuts and peanut butter jars.  The peanut butter I posted about lasted about 3 days which is SICK!! It was sooo good.  I think if I can drop the 10 lbs and focus on some speed work to get back in shape, I can get back to my times from pre-Nick!

A former colleague, Bill, that retired the year that I went out on maternity started running when he retired, dropped weight, got in shape,  and ran the 1/2 last weekend  and he is training for the full marathon in November! I'm so impressed! He has also joined a running club and it sounds fantastic. I am thinking this might be a great thing for me and thinking about joining.  Do you run with a club? What has been your experience? I signed up for one when we moved back here years ago and never had the courage to show up for the first time so I never went to one run!

  1. That looks delicious. I love all things pumpkin and I love cornbread so I will have to try it.

    I occassionally run with a group. I love it. Everyone in it is very speedy and it really motivates me to run faster.

    And Zach is going to be Zach Morris from Saved By The Bell for Halloween. David hates it but I think it is adorable.

    As far as the peanut flour goes, you can now buy it at Trader Joe's. Hope you live near one.

    So encouraging that you are 1 pound away from your pre-pregnancy weight. I think that is awesome, and you should totally try out the running club. I used to be really involved in the one here in Nashville and met some amazing people. Highly recommend it. :)

  5. Hey Lori Lynn - at Amazon! I use it for protein ice cream. It's a thickening agent and it says it is good for baked goods so I tried it! Don't think it is necessary in this recipe though.

  6. I run with my local chapter of Luna Chix - once a week in the evening for 4 miles. I love it, because it makes a change from running by myself, and I've met other girls who I've done some long runs with. The Lululemon store near me also hosts a weekly run, which I might start doing.
    That cornbread looks SO good! Can't believe you ran 6. I did 4 today and felt like a rocket . . why can't it be like that all the time? :)

I joined my local club when we moved here to meet folk and have never looked back. love being part of my club - I have friends to run with and as we are a very sociable club we have lots of social events too which is great fun. I am now ladies' captain and really enjoy encouraging other ladies to stretch their boundaries and I certainly have - from someone who had done a 10k and that was all, did a 53 mile race last year. I never even knew events like that existed before. As a lover of mountains it has also helped me to get into fell or mountain running which is my true passion - roads aren't really for me. I still enjoy runs on my own, but I love the fact I've got friends to run with too - sometimes I'm stretched and that pushes me on and other times it is more steady, but that is good too.

    You get lots of Piglet girls outfits that Kara could wear - one of my friend's wee girls has a few and she looks sooooo cute in them.

    Corn bread looks gooood.

    Well done on the 1 lb to go. Great effort!

  8. i thinking joining my running club was the best thing ever!! not only did it introduce me to some people who will be great friends for the rest of my life, but i learned a lot about running and it got me doing things i never thought i'd do. and to think i almost didn't go that day...

    I would love to join a running club - I think after my Oct full I will be more diligent about finding one.

  10. First, congrats on your great HM. I'm doing my first post-baby half this weekend. (And honestly, a big part o why I signed up was because "lil runner ran boston 5 minutes after having a baby".
    Thanks for the inspiration. :o)

    park characters for Halloween. My Sam looks too much like a chubby Eric Cartman to pass it up.

  11. The cornbread looks delicious! We downed an entire pan in one sitting...yikes. Luckily I have two growing boys to point the finger at. I don't know what they are doing for halloween. They like to wait until last minute which is always fun!
