Arnold Sandwich Thins; So Delicious Ice Cream Sandwiches

I've recently had the opportunity through food buzz to try Arnold's Sandwich thins - they are like a very thin roll, just like Thomas' Bagel Thins if you've tried them!   Just the right size and very tasty (the bagel thins too!)  Here's what I put on the Sandwich thin above:


Portabello Mushroom Sandwich - this is kind of rough amounts here!

Avocado - a few slices
Roasted Red Peppers - 1/4 c
Roasted Eggplant - 1/4 c
Olive Oil - 1 T
Breadcrumbs - 1/4 c
Fresh Parmesan Cheese - 2 T
Butter - 1 T

Process the peppers, eggplant and olive oil to a smooth consistency. Scrape out the mushroom and mix together the breadcrumbs, butter and cheese and place atop the mushroom. Cook at 400 for 15 minutes or until tender. Serve with pepper/eggplant and avocado.

Also, I saw So Delicious ice cream sandwiches at the store and picked them up. They live up to their name - so delicious!  :) the coconut taste is awesome, they are sweetened with agave, and they are little bites for 100 calories.

I'm starting to get into a routine with 2 kids. The last 2 days have been good and Kara seems to be doing a little bit better. I think bringing them to the gym daycare has been a super bonus!  Running is going ok. The half marathon is in just over 2 weeks and I haven't done more than 7 miles now at one time.  Going to attempt 10 this weekend, but it seems so long!! Motivation for long runs is not there anymore.

  1. love ice cream sandwiches. have you ever taken graham crackers, put fat free cool whip in the middle, and then froze them? they are really good, too. and you can use the chocolate graham crackers, too!

  2. Glad to hear that you are able to get to the gym with both kids. It must be a nice break for you during the day. Good luck with your 10 miler this weekend. You should have some nice cool running weather and that might be the motivation you need. I really hope that this recent heatwave is the end of summer. I can't wait for fall.

  7. do the half anyway, even if your mileage isn't all there...i WISH I HAD done another after andra! now too late with my ankle. the portobella sandwich looks awesome, that will be our dinner one night next week!

  9. I can't believe you're running a half already! You're so stinkin' awesome! And yes, those ice cream treats look soooo yummy. I might have to head to the store so I can fill my cravings in a somewhat "healthy" manner :-) Good luck this weekend!!!

  10. Those ice cream things look gooood!
    It's great you have daycare at the gym - I have to negotiate with my mum, which she loves of course, but does mean if she can't mamage I'm stuck. You can do the 10 miles - think of it as 2x 5 miles - get out for the first one and 'bof' before you know it, only 5 to go.
    Lizzie - 10 miles on the t-mill - oh my God, how do you stay sane - I find 10 miles on the road mind numbing enough - give me 10 miles over mountains any day!
    Gotta laugh at Rebecca saying she can't wait for autumn - as we haven't even had any summer (well a warm month in June and this week has been lovely) the thought of Autumn is so blooming depressing!!! Oh to live somewhere with proper seasons.
