almond silk and muffin pizza


So I've had to be pretty creative about breakfast. The breakfast pizzert was a big hit and today I was going to make a muffin recipe that I saw but decided I was too lazy for muffins and made it into pizza.
I can't remember where I saw this recipe  while I was browsing blogs. I will have to get back to you on that. I edited it so here was my recipe:

1.5 C whole wheat flour
2 T agave
2 tsp baking powder
1/3 c sweet potato
1 T oil
1 egg
1 cup strawberries
1/2 c milk
1 tsp vanilla.

Mix in a bowl and bake till firm about 15-20 minutes. Breakfast pizza, round 2. With the egg and more flour, this was more cake-like than pizzert, also very tasty.

    I have never thought of pouring the muffin mix into a pizza like loaf - good idea! That recipe looks tasty, too! Along with the bean sliders, I bet those would travel well for my relay this weekend :)
    Man, heat and humidity are rough, I think you're going to do great just take lots of water with you! And maybe drive yourself there and have the hubbs come later and mett you?
