Here's what I used:
CC Katie's Fudge You! Chocolate Protein Cake
- 1/4 cup chocolate protein powder (I used Trader Joe's hemp protein powder - all out of Jay Robb or I would have used that).
- scant 1/4 cup canned pumpkin (I used a bit less than 1/4 c)
- 1 and 1/4 tsp ener-g egg replacer (I don't have this so I made a flax egg - 1 T flax + 1/4 c water)
- 4 tsp sugar
- 1/2 tsp baking powder
- 1/2 cup water
- 2 T whole wheat flour (I added this in since I thought the batter was a little thin!)
I baked in a large muffin tin (two of them) at 350 for 30 minutes, then turned off the oven and kept them in for another 10 minutes. Next time I'll try the 390 that Katie recommends and maybe use the egg.
+ Strawberry protein ice cream with whipped cream and m & m's
