What to do with pomegranate?

I got a pomegranate - it looked so refreshing and I hear the season is ending. First one I've bought! I followed directions to clean it and get the ariis out. Yum yum. I ate some scoopfuls with a spoon. What are some ideas for what to do with it?

There was no pancake Sunday today - I overdid it last week and had Pancake Monday, Tuesday and Wednesday. Maybe next week!

Yesterday was my longest run to date after Philly - 7 miles and it felt great! I was aiming for 3, and kept adding on. I love runs like that! Today is a winter wonderland - with the tree up, lights on, and snow - I'm just loving it! I went for a run w/ my sister outside in the wonderland. It was gorgeous out!

Nick turned 10 months today! Ahh! Everyone tells you it goes fast - and it goes even faster than that! He's getting to be a little man and is so fun. We took him out in the snow yesterday for a rendition of the Christmas story (the marshmallow like snow suit). I'm so excited for Christmas - babies make it

  1. I've always wanted to buy a pomegranate but I've honestly don't have any idea how you are supposed to eat it! I will have to give it a go!

  2. OH first N is just SOOOOO big and adorable - what a cutie!

    I love pomegranate - so much that I can't bear to mix it up with anything else and dilute the flavor. Just take all the seeds, put them in a bowl after rinsing, and eat with a spoon. Usually finish the entire fruit myself in one sitting (snarf).

    But ... they are DELISH in a spinach salad with walnut and raspberry dressing .... and some apple. If you must.

  3. I bought a pomegranate earlier this year and just ate the seeds by themselves but like mentioned above, I bet they'd be great tossed in a salad.

  4. We enjoyed the snow, too! Elena loved it so much that when we came in she through the biggest temper tantrum. And I totally agree that babies make Christmas!

  6. Here, they serve it on top of baba ganoush, an eggplant dip to eat with pita bread. Delicious!

    I've followed you for a while, but never posted before, but I just rediscovered a recipe for pomegranate. It is a Quinoa, Feta and Pomegranate salad.

    Serves 4

    300g quinoa
    200g tenderstem broccoli
    200g feta crumbled or cubed
    1 handful pumpkin seeds toasted
    seeds from 1 pomegranate
    1 large handful of mint leaves roughly chopped
    1 larege handful of flat leaf parsley, roughly chopped
    4 tomatoes deseeded and chopped
    1 bunch spring onions finely sliced
    3 tablespoons olive oil
    3 tablespoons lemon juice.
    salt and pepper to taste.

    This recipe is for a cold salad, but given that it is winter I suspect you could adjust it to do it warm by just not letting the cooked items cool down. The tomatoes could be roasted I suppose but i'm not great with cooking toms because I don't eat tomatoes as they aggravate my stomach.

  11. I just tried my first pomegranate last week. Yummy, but I had a hard time with all the little pits/seeds.

  13. Awwwh...Nick is soo cute in his snow suit! You got so much snow!! A woman that works w/ my parents eats poms to detox. I don't know anything about this (yet) but I thought I would share :) I have never bought one...they are soo intimidating.

  15. I am addicted to pomegranates! They're $2.50 a pop here...so I treat myself while they are in season. I just eat them whole. I find it to be a fun activity while watching "the office" at night:> They would probably be good on a salad w/ goat cheese and carmelized walnuts, but then I think everything is delish with goat cheese:>

  16. Once I've got all the pips/seeds out of a pom, I'm totally over it :-) Kinda like pistachios. I buy the de-shelled ones :-)

    I know what you mean about time flying. Cairn will be 1 next month!
