another snow day

seriously? First we got dumped with 2 feet over the weekend and now another 2 feet ??
Couldn't leave the house today! Good thing for exercise TV and the treadmill right?
Nick was not a huge snow fan - but he's getting used to it.



I took the opportunity to make some black bean sliders - which Nick decided to just drop the pieces on the floor. He wasn't into them, don't you love that when you take the time to make something?
And Averie/HeAb's Maple Nut Oaties. These were very very sweet - I would reduce the sugar (maple syrup and agave nectar) next time by half.


I liked reading everyone's comments about eggs - I definitely need to clean up my act and start buying farm fresh or cage free. It was a big step for me to even eat eggs about a year or 2 ago - I was anti eggs for a long time, they just grossed me out and as a vegetarian I didn't want to be into them. Many of you said eat the yolk! And I don't know why I skip it - cholesterol? Fat?
I want the proteins from the whites but what all is in that yolk? I haven't had a whole egg in a very very long time!

Left over cake, left over cookies - there is way too much sugar in this house, and we're stuck here! Brutal.

  3. I wish I had a treadmill at home. The gym was closed today because of the storm! Stuck to the bike... tomorrow, I'm taking to the snowshoes :)

  5. After hanging out outside all morning with our kids, my neighbor and I were like, "What the heck would we do if we were snowed in and couldn't go play outside???" Cannot imagine! Nick looks like he's having fun though... :)

    I usually eat the yolks too, but never more than one in a day.

  10. I can't believe this snow! I have never seen anything like this before. It took Scott 2 hrs to shovel our drive this morning and he still couldn't get the car out so he ran to work. I am definitely going to appreciate Spring when it comes.

  11. We were snowed in over Christmas at our house, and it was the most wonderful, lazy, couch-filled 2 days ever. No clue what we would have done with a child though. Lots of Disney channel, I'm thinking. :o)

  13. That must be so rough not being able to go out of the house! I would definitely get cabin fever.... but ExerciseTV always saves the day! All of their stuff on exercisetv.tv is so great and fun!

  14. i have no idea what's in the yolk... i know that's the part the cholesterol (or most of it anyway) is in, and that's why a lot of people leave it out or only use 1/2 a yolk. other than that i don't know - hope you are able to find out!

  15. I read somewhere that eating the yoke with the egg white actually helps you absorb all of the nutrients the egg has to offer more thoroughly...
    I can't believe all that snow! Crazy.

  17. THe cookies look really good!! I think upstate NY is the only place that DIDN'T get buried with snow.
    If I'm eating an omelet, scramble, or any other egg preparation (fried, over easy, etc.) I have to eat the yolk. I just don't like the taste of white alone! Melty egg yolk with a little salt and paprika is so delicious- you won't believe what you've been missing!

    When I make oatmeal with eggs I do separate them. I've tried whole eggs and it really doesn't add any flavor, so I'm fine sticking with just the whites there.

  18. There's a lot of nutrients in the yolk, but that's also where the fat and cholesterol are. Eating a few a week is good for you, though.
