What do you use instead of butter?

We're down the shore for the weekend and I realized I've been using a whole lot of butter for veggies, bread, pasta... I love butter! In fact, my sister made it a point to tell everyone at my wedding that my mom used to catch me eating STICKS of butter behind the curtains when I was little. Hard butter does not appeal to me, but melted butter on bread.. mmm. But I need to move away from the butter (and the cheese!) We used whipped butter at home, but I didn't buy any when we came to the beach. What do you use instead of butter for veggies? pasta? on bread when you just want the taste of butter?

I ate 2 bowls of ice cream last night! Ahh!!

We took Nick to the beach for the first time today - so much fun!

  1. Cute pic of you and Nick. I don't use butter on veggies but I love bread and butter. Sometime I use nut butter just for more nutrients, or apple butter. Oh and you could try steaming veggies with chicken broth for flavour.

  2. I love the pic of you and Nick too! An idea for your veggies is to spray some of that salad spritzer on them...the brand name has slipped my mind, but it's in the salad dressing section and it's really low cal. I like the balsamic vinegar one. It makes plain, boring veggies, kind of tasty :-)

  3. Hmm... I actually really don't like the flavor of butter, so maybe I'm not the best person to make suggestions, but I often use spices, a little bit of salad dressing tossed into the pan at the last minute, or just a bit of olive oil/cooking spray and sea salt.

  4. you might find this disgusting, but when i was seriously watching calories i'd just use pam butter flavor spray. even on toast. especially on air popped popcorn. i'm not a huge butter fan, but it gave a little moisture.

  5. I use spray soy butter. I've used it for so long, I don't notice the difference TRy it, you might like it.

    Can't help you much with the butter. I actually don't really like butter, never have. I do use a teaspoon a night though of smart balance just to get some fats in with my dinner. I also use I can't believe it's not butter spray on veggies. I know, not a good choice...

  7. I cook with olive oil too. For veggies, I add sometimes add garam masala spice. Mmm. Make a really great garlic toast mixing equal parts butter & olive oil (~1 Tbsp each) with pressed garlic and salt (or just use garlic salt). Garlic bread that isn't too greasy or buttery. Crisps nicely under the broiler. You can keep the garlic butter you don't use in the fridge for a week or so.

  12. On vegetables, I eat plain or with a little lemon juice.

    Otherwise, I cook with olive oil.

I had to laugh at your butter story - when I was little and bacon was on the menu, I used to sneak off with the bacon rinds that had fat on them when my mum wasn't looking and eat them behind the bed in their bedroom. Now you couldn't pay me enough to even eat bacon!!! I use smart balance, but most of my cooking is with olive or canola oil.

    Nick is a beach baby!!

  17. I like Brummel and Brown, a yogurt based spread. But I only like butter-like stuff on sweets like muffins, etc. For veggies, I prefer a sprinkle of Jane's crazy mixed up salt, Adobe seasoning and/or parm/romano cheese. yum!

  20. Olive oil for me too. I use one of those supposedly healthy butter substitutes... Smart Balance. I think it still has some trans fat but it's better than butter in other ways. Everything in moderation. Except salt. Use lots of that. :P

  21. (first comment here-love your blog!) I won't use any butter substitute with hydrogenated oil. We use Promise Light for spreading or you can make a healthier butter by melting it, mixing it with canola oil, and then letting it set in the fridge. I like a sprinkle of sea salt on my veggies-tastes sweeter/richer than regular table salt. :)
